A Closer Look at the New Oyster Shell Project in Pelican Cove

Pelican Cove, a waterfront community on Little Sarasota Bay, is now home to an innovative environmental initiative focused on oyster restoration. The new oyster shell project, launched in partnership with Oyster Boys Conservation and the Sarasota Bay Estuary Program, aims to improve water clarity, provide habitat for marine life, and contribute to long-term shoreline protection.

This local project uses Vertical Oyster Gardens (VOGs), which are clusters of recycled oyster shells suspended from docks. These structures provide the substrate needed for young oysters, or spat, to settle and grow. As the oysters mature, they naturally filter pollutants from the water and enhance biodiversity around dock pilings. The approach offers a practical, community-supported method for restoring vital ecological functions that have been lost due to development and erosion.

The Role of Oyster Boys Conservation

Oyster Boys Conservation, the nonprofit organization behind this project, was founded by two brothers from Sarasota who were inspired to improve local waterways through oyster reef restoration. Their mission is rooted in conservation science and public engagement. They collect used oyster shells from area restaurants, process the shells, and convert them into VOGs with the help of volunteers.

The organization operates a shell recycling program that gathers thousands of pounds of discarded shells each year. Participating restaurants include Captain Eddie’s, Walt’s Fish Market, and Dockside Waterfront Grill. The collected shells are sun-dried, bleached, drilled, and strung into hanging gardens designed for easy installation under residential docks.

The lifecycle of each VOG begins with a restaurant meal and ends in the water, supporting the growth of living oysters that benefit the bay’s health. With this circular approach, the project reduces waste while restoring essential ecosystem services.

Pelican Cove Installation and Impact

In 2025, approximately 680 Vertical Oyster Gardens were installed at private docks throughout Pelican Cove. This installation was supported by a Sarasota Bay Estuary Program grant and coordinated with the Pelican Cove Homeowners Association. These gardens are tied to dock pilings and hang in the water, allowing oyster larvae to attach and develop into full-grown oysters.

This process not only helps reintroduce oysters to areas where natural reef structures have disappeared, but it also creates a refuge for marine life like crabs, small fish, and mussels.

Because the VOGs do not contact the seafloor, the installation process avoids complex permitting and minimizes environmental disruption.

Each oyster in the system plays a key role in improving water quality. An adult oyster can filter up to 50 gallons of water daily, removing suspended solids and excess nutrients that contribute to harmful algal blooms. By distributing hundreds of oyster gardens throughout the community, the project supports cleaner water in Little Sarasota Bay while also protecting the shoreline from erosion by dampening wave energy.

Community Involvement and Volunteer Work

The Oyster Boys Conservation team relies on the support of community members to prepare and assemble VOGs. Volunteer events are hosted at farms, schools, and residential workshops across the Sarasota region. Each session typically produces 50 to 100 new gardens ready for deployment.
